I present the puff pancake recipe. This is a Moroccan specialty, named “Msemen“; It is usually served with breakfast with honey, fresh cheese and olive oil.
Another preparation of stuffed puff cake is served in the evening with the soup.
Ingredients (people 8)
For the dough:
- 500g of flour
- hard wheat flour 500g
- 1 tsp caster sugar
- 1 tsp oil
- Lukewarm water
- Salt
For stuffing:
- 1 chopped onion
- 1 bell pepper, diced
- 1 tbsp olive cut
- 1 tbsp chopped parsley
- 1 tbsp grated cheese
- Salt
- Pepper
- Cumin
- Paprika
Preparation method:
- Mix all dough ingredients.
- Mix until a smooth paste.
- Let the dough rested 10 minutes.
- Deviser the dough into small balls.
- Roll out each ball to get a great circle, adding a little oil.
- Fold each circle following the folding method in pictures
- cook in a pan with a little oil.

Je vous présente la recette de galette feuilletée. C’est une spécialité marocaine, nommée « Msemen » ; Elle est servie généralement en petit déjeuner avec du miel, des fromages frais et l’huile d’olive.
Une autre préparation de galette feuilletée farcie est servie le soir avec la soupe.
Ingrédients : (pour 8 personnes)
Pour la pâte :
- 500g de farine
- 500g de farine de blé dur
- 1 càc de sucre semoule
- 1 càc d’huile
- Eau tiède
- Sel
Pour la farce :
- 1 oignon haché
- 1 poivron coupé en dés
- 1 càs d’olive coupée
- 1 càs de persil haché
- 1 càs de fromage râpé
- Sel
- Poivre
- Cumin
- Paprika
Méthode de préparation :
- Mélanger tous les ingrédients de la pâte.
- Malaxer jusqu’à obtenir une pâte lisse.
- Laisser la pâte reposée 10 minutes.
- Deviser la pâte en des petites boules.
- Etaler chaque boule pour obtenir un grand cercle, en ajoutant un peu d’huile.
- Plier chaque cercle suivant la méthode de pliage dans les images
- cuire dans une poêle avec un peu d’huile.

But how do you cook it? Over an open flame? In a pan? In the oven? I am unfamiliar with this so I have no idea how it is cooked. It looks delicious!
