Tajine of Eggplant
method of preparation tajine
(Add the vegetables as you like)
100g of eggplant, 100g of zucchini, 100g of red and green peppers, 100g of onions, 2 tomatoes, 1 clove of garlic
3 tablespoons olive oil, salt, pepper, paprika, 1 tbsp coriander
Cut the vegetables into cubes, heat the oil in a saucepan, add the onions then the vegetables
Add the spices and simmer gently
Mix the flour with water and salt, pepper, turmeric.
Cut eggplant into fries
Take eggplant and soaked in flour mixture and fry.
