I present you a fried fish with turmeric add to the flour and salt
1kg of fish of your choice for 4 people
Heat the oil in a pan of 3 or 4 quart to at least 375 degrees
Roll the fish in the flour, shake off the excess flour, and let the fillets sit on a rack or on waxed paper for 5-10 minutes.
Roll the fillets in the flour a second time, shake the excess flour, and fry, no more than 2 at a time. Turn once in the frying pan after a minute or two and remove when golden. They must be made in less than 4 minutes, white and flakey inside to the thickest section of the net. Do not overcook!
Drain each fillet on paper towels for a few seconds and serve.
