Je vous présente une recette de la tanjia.
Tanjia is preparing traditional Moroccan origin in the city of Marrakech.
Tanjia should be cooked in a clay pot inside a traditional oven for 12 hours (overnight).
But here I present a delicious express method.
I will accompany tanjia with salad.
Ingredients: (for 2 people)
For tanjia:
- 500g of meat
- 2 garlic cloves crushed
- 1 tsp cumin
- ½ tbsp turmeric
- 4 tbsp olive oil
- 2 tbsp plain oil
- 240 ml of water
- salt
- 1/4 lemon confit
For the salad:
- 2 carrots
- 1 potato
- 200g of beet
- 1 onion
- 1 lettuce
- 1 tsp chopped coriander
- 1 can of tuna
- Salt
Preparation method:
For tanjia:
- Place the meat in a pressure cooker and add garlic, cumin, turmeric, salt, olive oil,
- regular oil and water.
- Close cocotte and cook over very low heat for nearly an hour, and that’s good tanjia is ready.
For the salad:
- Boil the carrots, potatoes and beets separate each other.
- To pitch salad with lettuce, tuna and a little mayonnaise or salad dressings.

Je vous propose une recette de la tanjia.
La tanjia est une préparation traditionnelle marocaine d’origine de la ville de Marrakech.
La tanjia doit être cuite dans un pot de terre à l’intérieur d’un four traditionel, pendant 12 heures (toute une nuit).
Mais ici je vous présente une méthode expresse et délicieuse.
Je vais accompagner la tanjia avec une salade
Ingrédients : (pour 2 personnes)
Pour la tanjia :
- 500g de viande
- 2 gousses d’ails écrasés
- 1 càc de cumin
- ½ càs curcuma
- 4 càs d’huile d’olive
- 2 càs d’huile ordinaire
- 240 ml d’eau
- sel
- 1/4 citron confits
Pour la salade :
- 2 carottes
- 1 pomme de terre
- 200g de betterave
- 1 oignon
- 1 laitue
- 1càc de coriandre hachée
- 1 boite de thon
- Sel
Méthode de préparation :
Pour la tanjia :
- Déposer la viande dans une cocote minute et ajouter ail, cumin, curcuma, sel, huile d’olive, huile ordinaire et de l’eau.
- Fermer la cocote et laisser cuire sur feu très doux presque une heure, et voilà bonne tanjia est prête.
Pour la salade :
- Faire bouillir les carottes, la pomme de terre et les betteraves chacune séparer des autres.
- Faire dresser la salade avec la laitue, le thon et un peu de mayonnaise ou vinaigrettes.

Tanja est un plat purement MARRAKCHI
Et même si tu le mange hors Marrakech il n à pas le même goût. Alors pour manger la vrais tanja . Tu n à que prendre un billet pour Marrakech

Tanjia, that’s the name of it! A friend once cooked a meal over an open fire using a tanjia. I could never remember the name of it to explain to others. They say Tagine, and I’d say no, different kind of pot!

C’est une excellente recette de patience cuite pendant 12 h qui donne un grand appétit et ne pousse pas le fin gourmet de vite quitter la table. Car la main magique qui prend soin de la tanjia a une longue histoire culinaire, véhiculant, à chacune de ses extrémités, un parfum d’amour.
